6 grain Bread



Changed up a recipe from Anitra Kerr a bit- got this:



6 Grain Bread

Add 4 C warm water (100) to mixer
Add 1/2 C Powdered Milk (I used Moo's milk brand)
-1/2 C Veg. Oil
-1/2 C Honey
1 C 6 Grain
3 C White Wheat flour
Mix for 2 min

Add 2 T Yeast, turn mixer back on for 30 sec
Then add 2 T sea salt ( you dont want to add yeast and salt together, salt will kill yeast)
Then add about 6 C flour (might need more depending on humidity)

Let mix for about 5 min

I put EVOO on the table, folded my dough a few times until smooth to touch

Then let rise until double

Punch down (gently) and shape into loaves




Let rise again until double in size

Bake 350 - about 20 min. then cover with foil and bake another 10
(I test this by turning the bread on it's side and thumping it with my finger, if it sounds hallow- it's done. )

Bread Bowls

These make a fun twist to soup night.




Just take your bread dough recipe, or use mine that I use for EVERYTHING, and round out about an 8lb dough ball. If you don't have a scale eyeball it to about four frozen biscuits size. Brush with EVOO and then let rise until doubled. I use the EVOO because it gives a darker color to the bread, which I like for soup bowls. Also if you want to add crisp to this, which I did and liked it,her is what you do:
Wile preheating the oven, place a glass casserole dish filled halfway with ice cubes in the bottom rack of the oven. Place bread in oven and right before all cubes are melted take out the water.

Low- Fat Banana Bread Is The Bomb!


I L-O-V-E this recipe. Just tried it out and I can't stop eating it. It is low in fat so, I can eat double right?

Ingredients:

4-5 Large Ripe Bananas
2T. Applesauce
2T Butter, softened
1 Egg
1 1/2tsp. Vanilla
1/2 C Brown Sugar
1/4 C White Sugar
1 C All Purpose Flour
1/2 C Whole Wheat or White Wheat Flour- I used my hard white wheat that I ground up.
(if you don't have either, just substitute with other flour)
1tsp Baking Soda
1/2tsp Baking Powder
1tsp Salt


Directions

Combine all the wet ingredients except the bananas. Don't over mix.
Add dry ingredients just until combined.
Mash up bananas in separate bowl, then add to your mixture. Mix one minute.
I baked it in an 8x8 glass pan.

Bake 350 /50-60 min

Bagels




This is a basic bagel recipe that's pretty darn good. I have made bagels with my bread recipe I'll let you decide which you like better.

Ingredients:

2 tsp. Active dry yeast
1 1/2 T. Sugar
1 1/4 C. Water
3 3/4 C Bread flour, plus more for kneading purposes
1 1/2 tsp. Salt

Directions:

*Sprinkle yeast and sugar into 1/2 cup of the water in a bowl. (water is to be 100 degrees) and let stand for 5 minutes. Mix flour and salt in your mixer. Turn it on and slowly add the yeast mixture. Pour in the rest of the warm water and mix until it forms a dough ball. You may need to add flour to get it from being sticky.
*Turn dough out onto a floured board and knead until smooth. (don't hate the kneading!)
When the dough is firm and stiff put in to an oiled bowl and let rise until double.
*Turn dough out onto board again and punch down, then let it rest 10 minutes. This rest will help it keep shape when forming so dont cheat.
*Cut your dough into equal pieced. If you have a scale I like to weigh out 2 1/2 oz. pieces.
Shape each piece in to a ball and then form the ring by taking your floured finger and stick into the middle of the dough. Work your finger in a circle to stretch the hole, remembering that the dough will rise and make that hole smaller so i get it a pretty good size at first.
*Place the bagels on a lightly oiled baking sheet, cover and let rest 10 minutes or so. Bring a large pot of water to a boil, add 1 T sugar, then reduce to a simmer. Using a perforated spoon (large spoon with holes in it) carefully lower the bagels into the water. You can do two at a time if you be sure not to let them touch.
*Boil bagels about one minute on each side then remove and place on the baking sheet.
*Bake 20 min. at 425
*Makes about 8 bagels.

Zucchini Bread

My all time favorite and only one I'll ever use!

Ingredients:
1/2 C Apple sauce
1/2 C Oil
2 1/2 C Shredded Zucchini
2 1/3 C Sugar
1 t. Vanilla
1/3 C Water

1 t. Cinnamon, Nutmeg
2 t. Baking Soda
1 1/2 t. Salt
3 1/4 C Whole Wheat Flour- or All Purpose if you choose not to do WW

Mix first 6 ingredients, Combine all dry ingredients in a bowl, sift with whisk then slowly add to wet ingredients while mixing on low. 

I like to use a bunt pan for this, bakes quicker and more evenly. It also cuts into nice serving pieces.

Whole Wheat Banana Bread

OK, this is New ! I have found a better Banana Bread Recipe and LOVE IT




Banana Bread

1 C. All Purpose Flour
1 1/4 C. Whole Wheat Flour
1 t. Baking Soda
1/2 t. Baking Powder
~ Sift Together

1 Stick unsalted Butter
1 C.  Water Sugar
1/2 C. Brown Sugar
1/2 t. Salt
~Cream Together

2 Eggs
1T. Vanilla
4T. Sour Cream
~Mix just a bit
~add flour mixture
~4 Large Bananas, smashed until creamy

~Pour into sprayed bunt pan
~Bake 350 1hr
~Cool 20 min then flip onto serving platter

When I saw this recipe I wasnt quite sure what it would be like, allthough I loved that it takes no yeast, and from start to finish it takes 1 hour. It has the consistancy of a zuccini or banana bread.
It was delicious! With butter and honey, it almost felt like we were eating cake. My 2 year old ate 3 slices and kept saying "more" So, I love this recipe and because all the ing. are in my food storage, I can make it anytime!

Ingredients:
1 egg, beaten (1 T. dry egg powder + 2 T. water)
2 c. buttermilk (1/3 c. dry milk powder + 2 c. water + 2 T. vinegar or lemon juice, let sit for 5 minutes)
3 T. molasses or honey
2 T. butter, melted
2 c. whole wheat flour
1 t. baking soda
1 t. salt
1 t. baking powder

In a bowl, combine egg, buttermilk, molasses or honey, and butter. In a separate bowl, combine flour, baking soda, slat and baking powder. Stir well; add to first mixture and mix well. Pour into a greased loaf pan. bake at 400 degrees for about 45-40 minutes, until lightly brown. Cool slightly then turn out of the pan onto a wire rack. Slice while warm. Makes 1 loaf.

Challah Bread


Heavenly, Seriously


2 medium loaves 

FOR THE SPONGE
1 cup luke warm water
1/4 cup honey
1 package active dry yeast
1 cup bread flour

FOR THE BREAD
1/4 cup olive oil
1 whole egg
4 egg yolks
1 1/2 teaspoons kosher salt (it's fine to use a different salt)
2/3 cup sugar
2 1/2-3 cups bread flour
1 egg
1 tablespoon water

poppy seed or sesame seed or cinnamon sugar or cheese (optional)

Directions
1 In a large mixing bowl, stir together the water, honey and yeast.
2 Let stand for 5 minutes.
3 Stir in 1 cup bread flour, and cover with a towel.
4 let stand for 30 minutes.
5 Stir in the olive oil, whole egg, and egg yolks until very well mixed.
6 Add the salt, sugar, and the rest of the flour.
7 You should have a sticky dough Pour dough out onto a well floured surface and knead, adding flour as you need it, for 10 minutes.
8 Place dough in a large greased mixing bowl and let rise for 1 hour.
9 Place dough in the refrigerater and let rise over night or at least 6 hours.
10 Turn dough out on a corn mealed surface and cut it into two proportional pieces.
11 Cut and braid the two dough balls, place in two loaf pans or form the Jewish circle with them.
12 Let dough rise for 1 hour and preheat your oven to 375F.
13 Beat 1 egg with the tablespoon of water and brush the doughs with the egg wash TWICE.
14 Sprinkle with poppy seeds, sesame seeds, or cinnamon sugar, optional.
15 Bake for 30 to 40 minutes, you may have to cover the breads with foil to stop them from browning to much after 15 or 20 minutes.
16 Remove the breads from the oven and either place them in plastic bags to get a soft crust or place them on wire racks until cooled completely before storing for a crisp crust (I personally don't wait for either and just eat it right out of the oven).

18**Ifyou would like a cheesey challah bread, just sprinkle on your favorite cheese in the last 2 minutes of baking ENJOY!

All Purpose Bread Recipe


I use this one of my rolls, pizza dough, cinnamon rolls and pan loafs. It's full proof for me.

Put Dry ingredients in bowl with paddle attachment
3 Cups Bread Flour
2t. Salt
1/2 C Sugar
1 T. Yeast

Add:
1 Egg
1/2 Cup Oil
2 1/2 C Hot water (100 degrees)
Mix on low speed until blended

Let sit five minutes
Switch to dough hook

Add:
5 C. Bread Flour
*May need to add more depending on humidity that day

*To make Whole Wheat Bread Just follow same process just with Whole Wheat Flour. Just Add the Last 5 Cups of Flour one at a time as Whole Wheat has more Gluten and will sometimes not need as much into a recipe

I made this today, it is the recipe above just all Whole Wheat. It turns out beautiful, not heavy at all.

* If you want to just add a few cups of whole wheat to this bread recipe, here are the directions. It is again, super easy and yummy.

Add:
1 Egg
1/2 Cup Oil
2 1/2 C Hot water (100 degrees)
Mix on low speed until blended


Switch to dough hook

Add:
2 C. Whole Wheat flour and 2 C Bread Flour
Also you will need 1 C. of the regular bread flour to add in if necessary, depending on humidity that day you might need more or less.
